Ingredients

    you need...

    boneless skinless chicken breasts
    vegetable oil
    enchilada sauce (red or green which ever you prefer)
    shredded cheese
    olives or onions if you like those in your enchildads

Directions

choose how many chicken breasts you will need to make the amount of enchiladas you want to make. boil the chicken until is it fully cooked.
let the chicken cool then shred it or cut it up and place in a bowl, preheat the oven to 420°. pour the oil into a small frying pan you put the tortillas one at a time in the oil once it is hot and let the tortilla get soft takes about 10 seconds. lay it in a rectangle baking dish put the chicken cheese and other ingrediants if you chose to use them in the tortilla roll it and lay in the pan with the crease facing down so that it doesnt keep opening up on you repeat that step until you have as many enchiladas made as you need. then warm up the enchilada sauce in a saucepan and pour over the top of the enchiladas and sprinkle cheese over the top you may top them with the olives and onions if you like as well. put in the oven for about 10 - 15 minutes until the cheese is completely melted take out and enjoy!
