Introduction

Like the German Pancakes made in a 9x13 pan, but mini for easy serving, made in a regular sized muffin tin. No butter added, just sprayed the pans to cut fat. Ingredients

    8 large eggs
    1 1/3 cup milk (used unsweetened almond/coconut blend milk)
    1 1/3 cup flour
    1/4 tsp. salt

Tips

My muffin tins are dark. So 18 minutes is great.
I needed 18 muffins for my family of 7, so I increased the original recipe to make sure I got that many. Most recipes have 6 eggs and 1 cup of milk and flour for 12-18.


Directions

Preheat oven to 425.
Spray muffin tins (18) with cooking oil spray.
Beat eggs well, add milk and beat--just use a hand whisk.
Add flour and salt.
Mix together, but don't over beat. Batter will still be lumpy.
Pour in to muffin cups.
Bake for 18-25 minutes depending on fullness of cups and how done you like your pancakes, and the darkness of your muffin tins.
