Made with sour cream and palm/coconut sugar.Looked around web for measurements then made up the rest. :)

Ingredients
-
1 medium to large sweet potato
1 tsp coconut/palm sugar
6tbs (approx 1/4 - 1/3c) Sour Cream
1/2 tbs Unsalted Butter (cut into pats)
Tips
This is filling so 1 half may be enough for 1 serving.
Palm/Coconut sugar is known for low GI, giving less sugar spikes. Still high carbs (4g /tsp) but worth it. To me. :)
Directions
-Poke vent holes in washed sweet potato
-Microwave for approx 5m
-If not soft, turn and mw in 1m increments
-Let cool 10-15m. (if you can slice it hot it cools faster)
-Preheat oven to 400
-Scoop out potato into bowl or processor/blender (careful not to tear skins, set aside skins)
-Blend/Process/Mash potato till desired consistency
(keep in mind you are still going to be mixing in other ingredients which will process the mixture down further)
-pour in sour cream and sugar
-Mix thoroughly
-Scoop mixture back into skins.
-Lay pats of butter on top
-Bake 15-20 min until starting to brown on top & thoroughly heated.
Serve & Enjoy. :)
