Ingredients

1lb gr. beef, turkey or chicken
1 1/2c green bell pepper
1/2c onion
2 cloves of garlic
1/4 tsp salt
1/4 tsp black pepper
2c cooked brown rice
1c tomatoes diced
1 (24oz) jar reduced sodium, no sugar added spaghetti sauce
1 1/2 c reduced fat shredded mozzarella cheese blend divided
Tips
May need more sauce rice soaks up a lot. Add more veggies or black beans whichever you like to make it your own
Directions
1.Cook meat untill no longer pink. Drain grese then add peppers, onion, garlic, salt, pepper. Cook untill peppers become tender.
2.Preheat oven to 350
3. In a large bowl stiry together mean mixture, precooked rice, tomatoes tomato sauce, and 3/4c cheese.
4. Spread mixture into a 2 1/2 quart casserole. Sprinkle with remaining cheese
5. Bake 25mis or untill heated through and cheese is melted.
