Ingredients

    - 2 big courgettes (zucchinis, ~1500g without the core)
    - 20g olive oil (1 or 2 tbsp)
    - 1 big onion (about 120g)
    - 1 small garlic clove (~20g)
    - 400g canned diced tomato pulp & juice

    - salt, pepper

Tips

If you have some peppers (chili ones, bell ones or others), you can add them with the tomatoes to obtain a tastier recipe.
Ratatouille only is a vegan/vegetarian side dish, but you traditionally eat it with grilled meat or fish in the late summer.

If there is too much for one meal, you can eat it hot or even cold later (2 or 3 days into the fridge, or you may freeze it for a longer conservation).


Directions

Prepare the vegetables : clean the courgettes (or peel it if the skin is hard), core them and cut them into bid dices. Peel the garlic and onion, chop both (into slices or dices).

In a huge pan and on high heat, pour the olive oil and glaze the onions. Once they look pretty, do the same with the courgette dices. Add the tomatoes and the garlic.
If you think that the tomato sauce doesn't recover the courgettes enough, pour some water on it.

Season with salt and pepper, and reduce on medium heat to obtain a soft bubble. Let it cook around 30 minutes.
