Ingredients

    2.5 c unbleached flour
    1 tsp salt
    2 tsp active dry yeast
    1 c flour
    1 tsp EVOO

Tips

I could recommend using a dough hook to knead the bread, if possible.


Directions

Combine the yeast and warm water. Let sit for 5 minutes until dissolved.

Add salt, flour, and EVOO. Knead dough for 5-7 minutes.

Oil the bottom of the bowl, place the dough back in, cover, and let rise for 1-2 hours.

Preheat oven and pan at 450 degrees.

Divide the dough into 8 equal parts. Make into small discs and roll out on a lightly floured surface until 8-9 inches and about 1/4 inch thick.

Place 2-3 discs on the pan and let bake for 3 minutes.
