Ingredients

    6 slices deli ham
    4 large eggs
    .5 c cottage cheese
    .5 c shredded cheddar
    1 T half and half
    1 T water
    minced onion and garlic powder to taste

Tips

I eat one servicing and refrigerate the rest for a couple quick breakfasts later in the week.


Directions

Preheat oven to 350°. Spray large 6 cup muffin pan with non stick spray. Tuck a slice of ham in each. Beat remaining ingredients together and pour evenly into ham cups. Bake for 20 minutes or until they puff up and eggs are set.
