Introduction

I created this recipe over many revisions to create a tasty, but very healthful muffin that is also vegan so my brothers could enjoy them, too. It can be made gluten and soy free if needed. Ingredients

    15 oz can organic pumpkin
    3/4 cup organic unsweetened applesauce strawberry
    1/2 cup soy milk (or milk of your choice)
    1 cup maple syrup

    1 cup protein powder (soy, hemp, & / or whey)
    2/3 cup ground flax (& / or ground flax, sunflower, pumpkin, sesame seeds,& goji berries)
    1 cup brown rice flour (or any other flour)
    1 cup quick oats
    1 cup bran (wheat, rice, & / or oat)
    2 tsp baking soda
    1/2 tsp baking powder
    1/2 tsp salt
    2 Tbsp cinnamon
    1 tsp nutmeg
    1 tsp ginger
    1 tsp ground cloves




Tips

You can use any combination of milks, protein powders, flours, and brans to meet your dietary needs and what you have on hand.


Directions

Preheat oven to 375 degrees. Bake until toothpick comes out clean.
