4 raw chicken breasts cut into cubes
Curry powder (I use Rajah) 6-8 tablespoons
1 large can (28oz) crushed tomatoes
1 can coconut milk unsweetened(5-6 oz)
Tips
The curry powder mixture will vary according to brand and taste.
Directions
Brown chicken in coconut oil. Add tomatoes, curry powder. Simmer 30 minutes. Add coconut milk at the end and heat another 10 minutes. Serve over rice as desired.
