Introduction

Simple fried Salmon Patty recipe, taught to me by my beloved Grandaddy. Simple fried Salmon Patty recipe, taught to me by my beloved Grandaddy.
Number of Servings: 13

Ingredients

2 cans Pink Beauty Pink Salmon
    2 large eggs
3/4 sleeve saltines (unsalted in this recipe)

Tips

When cooking the mixture is fairly fragile if you move it too much, so try to just leave it be as much as you can. Enjoy!

Directions

Put about an 3/4" of oil (Canola is best, used vegetable in this recipe because it was all I had) into a large skillet. Set on MEDIUM to warm as you get the ingredients ready.

Open and drain your salmon. Remove all bones and skin. Use a fork to chop and "flake" the salmon. Add in two eggs, and 3/4 sleeve (about 25 crackers) crushed into small pieces. Using your hands (or a spoon if you must) mix all ingredients thoroughly.

Once your oil is warm enough, make about 3" patties and place gently in oil. Let them sit in hot oil for about three or four minutes. When the bottom is brown it's ready to flip. Brown other side. Set to drain on a paper bag, rack or however you choose. Serve!

Serving Size: Makes 12-13 3" patties
