Ingredients
3/4 cup Oat flour (or 1 cup old fashioned oats, blended into a flour)
1 tsp Baking powder
1/4 tsp Salt
1/2 tsp Pumpkin pie spice
1/2 tsp Cinnamon
1/4 cup Baking stevia (or 1/2 cup sweetener that measures like sugar)
1 large Egg
1/4 cup Unsweetened almond milk (or apple cider)
1/4 cup Unsweetened applesauce
1/4 cup Pumpkin
Cinnamon & "Sugar" Coating:
1 tbs Cinnamon
2 tbs Sweetener of choice
Directions
Preheat oven to 350 degrees. Spray a donut pan with cooking spray.
In a medium size bowl, mix together the dry ingredients. In a separate bowl, mix together the wet ingredients. Combine the wet ingredients with the dry, and mix until batter is smooth and free of lumps.
Divide batter evenly between the 6 donut molds. Bake for 12-15 minutes, or until toothpick comes out clean, and donuts are set. (Note: To make it easier, you could also put batter in ziplock bag, snip off a corner, and pipe filling into donut molds).
Meanwhile, to make the cinnamon mixture, combine cinnamon and sweetener in a small bowl. Sprinkle cinnamon mixture evenly over donuts. Enjoy!
