Introduction

Ingredients

    4 bone in pork chops
    1 cup onion, chopped
    1 can Hunts diced tomato, basil, garlic, oregano
    1 cup mushrooms, sliced
    2 cloves garlic, chopped
    1 medium green pepper,thinly sliced
    2 Tbsp olive oil
    1 tsp Italian seasoning
    1 tbsp basil
    1 tbsp oregano
    salt and pepper to taste

Directions

1. Heat 1 tsp of olive oil in a large pan. Cook the mushrooms until tender, about 7-10 minutes. Remove from pan and set aside
2. Season pork with italian seasoning, salt and pepper. Add the rest of your oil to the pan. Brown both sides of the pork, about 5-10 minutes, depending on thickness. Remove from pan and drain all but 1 tbsp of drippings.
3. Cook onion for about 5 minutes and add garlic. Cook for another 2-3 minutes.
4. Add tomatoes, basil and oregano. Stir and add pork chops back to pan. Cover and simmer for 15-20 (depending on thickness)
5. Add green pepper and mushroom. Cook another 5 minutes, until green pepper is tender.
6. Serve over rice
