Ingredients

    1/2 can Light Coconut Milk
    2 Tbsp Curry Powder
    3 Chicken Thighs, cut into 1-inch chunks
    1-2 Red Bell Peppers, sliced
    1 medium Zucchini, sliced in half, then cut into pieces
    1/2 medium Sweet Onion, sliced or diced
    Salt & Pepper to taste

    Brown chicken in a skillet then add the rest of the ingredients. Simmer on medium heat for 10-15 minutes until vegetables are soft.
