Ingredients

1 cup diced onion
1 cup diced carrot
1 celery stalk diced
1 cup diced rutabaga
1 large or 2 medium potatoes, diced
1 liter turkey stock
1/4 cup pearl barley
1 cup diced cooked turkey
water (as needed)
Salt and pepper or other seasonings to taste
Directions
Heat oil in large pot.
Add onions, carrots, and celery and cook for about 2 minutes.
Add the turkey stock and barley, continue cooking about 5 minutes.
Add rutabaga and potato, continue cooking until vegetables are tender and barley is cooked. Add water if necessary to thin it out, as the barley will thicken it. Season to taste.
Add the turkey and let the soup simmer for 10 minutes or even longer to let all the flavours meld together.
Serving Size: Makes 8 1-cup servings
