Number of Servings: 6

Ingredients

    1-1/2 cups Coconut Milk, Light, (1 14 oz. can)
    2-1/4 Tbsp Green Curry Paste
    6 Tbsp Fish Sauce (could substitute lite soy sauce)
    Granulated Sugar, 4 tbsp
    3/4 cup Bamboo shoots (1/2" slices)
    1 pound top sirloin steaks
    1 package frozen Broccoli Florets, thawed (16 oz)
    1/2 package frozen Carrot, thawed (sliced - 8 oz)

Directions

1. Slice beef into thin strips.

2. Heat sauce pan over medium heat.

3. Add coconut milk and curry paste, and stir until thoroughly mixed.

4. Add fish sauce, sugar, bamboo shoots, beef, broccoli and carrots and mix together well.

5. Bring to a simmer, cooking until heated through (about 5-7 minutes).

Recommend serving over steamed brown rice. Enjoy!

*Also good made with Red Curry paste.
