Introduction

I'm not vegan, but I am lactose intolerant. One day I woke up with a bad craving for a mint chip smoothie. After the craving didn't go away, I found this recipe. Just wonderful! (Big tip, don't substitute milk chocolate for dark chocolate. It's not nearly as good.) I'm not vegan, but I am lactose intolerant. One day I woke up with a bad craving for a mint chip smoothie. Number of Servings: 1

Ingredients

    3 handfuls spinach
    2/3 cup almond or soy milk
    1 1/2 cup ice
    1/2 tsp peppermint extract
    Splenda, to taste (probably around 1/2 tbs)
    1/3 - 1/2 cup dark chocolate morsels

Directions

Throw everything except the chocolate into a blender. Blend until smooth, then about 30 seconds more. Add chocolate and blend 5 - 20 second, depending on your blender and preference. Pour into glass(es) and enjoy!

Serving Size: Makes about a glass and a half to two glasses
