Introduction

Lack of a mortar and pestle or food processor necessitated this recipe. I had a recipe for a garlic-y steak that required a garlic paste but no matter how finely I manually minced the garlic, I could not get it to paste and spreading minced garlic on the steak didn't really work that well so the next time I made the steak, I decided to roast a whole head of garlic and spread it on afterwards. It was a good decision; if you like garlic and steak, you'll love this steak. Ingredients

    • Small-medium head of garlic, top cut off
    • 1 tsp extra-virgin olive oil
    • 1 flank steak, about 1-1/2 pounds
    • Salt & pepper

Directions

• Place head of garlic on a square of aluminum foil, drizzle with olive oil & wrap tightly
• Place in a 400 degree oven for 40+ minutes, remove & let cool
• Squeeze garlic paste over both sides of steak. let sit for 30 minutes
• Preheat grill to high heat. Grill steak 5 to 7 minutes, until medium-rare. To check, cut into meat with a knife and remove when meat is slightly less done than you want it to be. Transfer to cutting board; cover loosely with foil and let rest 10 minutes. Slice very thin, against the grain and at a slight angle
