Ingredients

    1/2 cup plain non fat yogurt
    4 large egg whites
    1 teaspoon pure vanilla extract
    1 cup old fashioned oats
    4 teaspoons packed brown sugar, divided
    1 cup fresh blueberries, washed
    1/2 cup cottage cheese

Directions

Preheat oven to 350 degrees and grease an 8x6 casserole dish.

Using a stick blender, whip up the egg whites, yogurt, and vanilla until fluffy.

Add the oats, baking powder, and 2 teaspoons of the brown sugar. Mix well.

Place half the oat mixture into the bottom of the greased casserole dish.

Spread the cottage cheese over the oat mixture. Place about 2/3 cup of the blueberries on top of the cottage cheese.

Cover the cottage cheese and the blueberries with the rest of the oat mixture, the remaining few blueberries, and sprinkle 2 teaspoons brown sugar on top.

Bake at 350 degrees for half an hour.

Remove from oven and let sit for ten minutes before serving.

    You are so cute. XOXOX This is really good ... even The Biologist eats it. Makes 4 decent sized servings ....I'm going to enter an apple version today, gotta keep myself honest!!!
