Ingredients

    1 Tbl extra virgin olive oil
    1 cup chopped carrots
    1/2 cup finely chopped asparagus
    1/2 cup finely chopped celery
    1 cup vadilla onion
    1/2 cup finley chopped green onions
    3 clove garlic minced
    1/2 tsp ground cumin
    1/2 tsp dried dill weed
    5 cups diced potatoes
    6 cups 99 % fat free chicken broth
    1/2 tsp salt
    1/2 tsp black pepper
    1/2 cup flour
    3 cups 1% milk
    8 oz. sharp cheddar cheese

Tips

Garnish with a fresh shredded cheese and finely chopped green onions.


Directions

In large pot saute carrots, asparagus, celery, gralic, and onions with olive oil until golden brown. Add potatoes, chicken broth, cumin, dill, salt, and pepper. Bring to a boil. Reduce heat to simmer, cover pot and cook for 30 min or until tender. Meanwhile, whisk together milk and flour in medium bowl until smooth. Next slowly whisk mixture into soup. Cook over medium heat and stir occationaly until soup thickens. About 10 minutes. Add cheese. Stir until cheese is melted into soup.

Serving Size: makes 12 1-cup servings
