Ingredients

1 lb cleaned chicken gizzards
3/4 t kosher salt
1.5 c duck fat
4 garlic cloves
1 t whole black peppercorns
4 sprigs thyme
Directions
Season gizzards with salt and let sit in a covered container 8-24 hours.
Preheat oven to 300F. Melt duck fat in small ovenproof pot. add garlic, peppercorns and thyme into the pot. When it's fragrant, add the gizzards. Stir to submerge and bring to a simmer.
Cut a circle of parchment paper the same diameter as the pot, place it on top of the liquid. Cover with lid, place in oven and allow to braise for 2 hours or until fork tender.
To serve, remove gizzards from the fat and fry up in a pan.
