Ingredients

    1 oz chicken breast, boneless, skinless, diced in bite size pieces
    1 cup fresh broccoli chopped in bite size pieces
    1 cup long grain white rice, rinsed
    1 Tbsp tamari or soy sauce (optional)

Tips

You can also make in a rice steamer. Start the rice first, After 10 minutes layer broccoli and chicken over rice. Continue cooking until chicken is cooked through and rice is tender.


Directions

In a small saucepan bring 2 cups water to boil with a pinch of salt. When boiling add rice and stir. Bring back to a boil, cover and reduce heat to low. Cook for 18-25 minutes til rice is tender. (start checking at 18 minutes)
While rice is cooking,
In a steamer basket, Layer broccoli and chicken. Steam for 10-12 minutes til chicken is cooked through and broccoli is tender. Serve over rice with a drizzle of soy sauce.
