Ingredients

3/4 c. raw cashews
4 pitted medjool dates, roughly chopped
1 tsp vanilla extract
1 tbsp water
Tips
Expect your hands to become oily as you roll the bites into balls since the natural oils from the cashews will be released. You may want to blot the bites with a paper towel prior to placing in the fridge.
Directions
Using a food processor, grind the cashews to a fine consistency.
Add in the remaining ingredients and pulse until a dough starts to form.
Roll into 6 1" balls and place onto a small plate.
Place the plate in the fridge for about an hour or until the bites firm up.
Serving Size: 6 balls about 1" round
