Ingredients

    1 pd black beans
    2 C chopped raw onion
    1 C diced celery
    3 cloves minced garlic
    2t cumin, ground
    1t coriander, ground
    ground pepper to taste
    2 cans (4 ounce) mild green chiles
    1 pds Eckrich Skinless Turkey Sausage, cut into bite size pieces
    2 C chicken broth
    4 C water (may use one cup of water from cooking the beans)

Directions

4 servings.
Soak beans overnight. Cook in pressure cooker until soft. Mash a third of the beans. Saute onion, garlic in olive oil with spices until soft. Add chicken broth, chiles, beans and water, simmer for at least 45 minutes. You can add liquid, either broth or water if to thick for your taste. Add sausage and simmer to taste.
