Introduction

Ingredients

1 large red pepper
1 small tub of low fat cottage cheese
fresh chives, just a handful!
a squirt of lemon juice

you can add other salad items if you wish - just chop it up fairly small and mix it in!
Directions
#1 get your pepper, give it a quick wash, remove the stalk and cut in half. Scrape out the seeds and light colored bits.
#2 Put the cottage cheese in a bowl, chop the chives up very finely and add them to the cheese. Add a small squirt of lemon juice and mix!
#3 Cram the cottage cheese into the pepper halves evenly et. voila! it's very easy and scarily delicious!
HINT - if you fancy you could line the peppers in a layer of chunky veg - such as cucumber slices or lettuce, before adding the cottage cheese.
HINT - also if you place the two halves back together once filled and wrap tightly in cling film, it will travel well and won't make a mess!
