Introduction

A delicious vegan chili, makes enough for a week's of lunches! A delicious vegan chili, makes enough for a week's of lunches!
Number of Servings: 5

Ingredients

    olive oil 2 tsp
    minced garlic 2 tsp
    quinoa, uncooked, 1 cup
    26 oz crushed or diced tomatoes
    8 oz tomato sauce
    1 cup water ( or more if needed)
    1 8 oz can of black beans
    1 1/2 cups sweet corn
    2 tsp chili powder
    1/2 tsp smoked paprika
    sprinkle of cayenne pepper
    salt and pepper to taste

Directions

cook garlic in oil in med. saucepan until brown and then add in garlic, paprika, chili powder, cayenne, salt and pepper. cook for 2 mins. Add crushed tomatoes, tomato sauce and water, add quinoa and bring to a boil. Simmer for 30 mins adding more water as needed. Taste and season as needed with salt, pepper and chili powder. Add corn and black beans, boil for 5 mins . Add water and/ or tomato sauce to reach desired consistency. can be served with sliced avocado or cilantro. I love it with a bit of fat free ranch dressing drizzled on top ( but that is not vegan)
