Ingredients

1 boneless, skinless chicken breast
salt and pepper
1 cup flour
3 eggs
A splash of milk
1 cup of Honey Bunches of Oats (with or without almonds)
1 cup bread crumbs
1 tablespoon paprika
1 tablespoon poulty seasoning
1 tablespoon Montreal Seasoning
1/4 cup olive oil
Directions
Preheat oven to 400 degrees F
Season chicken with salt and pepper. I usually pound out the breast so I can cut it into 4-6 pieces. Place flour in a large shallow dish. Combine cereal, bread crumbs, paprika, poulty seasoning, Montreal seasoning, and olive oil in food processor. Transfer this to a shallow dish after mixing. Beat eggs and splash of milk in a shallow dish. Coat chicken in flour, then coat in eggs, then in breading and place on a nonstick cookie sheet. When all chicken is coated put in oven for 15-20 minutes, or until evenly brown and cooked through. This may be served hot or cold and you may also use chicken tenders instead of a whole breast.
