Introduction

A baked oatmeal casserole with whey protein. A baked oatmeal casserole with whey protein.
Number of Servings: 12

Ingredients

    5 c of rolled oats
    5 servings of whey protein powder
    4 large eggs
    1.5 c of unsweetened almond milk
    1/2 c of brown sugar
    1 c unsweetened applesauce
    1 tbsp of olive oil
    1 tsp salt
    2 tsp baking powder
    1 tbsp of ground cinnamon
    1 tbsp Vanilla extract
    3/4 c of raisins
    3/4 c of chopped pecans

    Mix dry ingredients together in a large bowl. In another bowl beat eggs. Add applesauce and liquids to the eggs. Pour the egg mixture into the dry ingredients and mix well. Pour the entire mixture into a lightly greased casserole dish.

Tips

If you remove the raisins and pecans, the calories are decreased by approx. 40 (raisins) and 50(pecans) calories per serving. If you use egg whites only instead of whole eggs then increase the applesauce another 1/2 c.


Directions

Baked at 350 degrees for 35 minutes. Check with a toothpick at 28 minutes, it may be ready especially if you prefer a softer texture. Let it set for at least five minutes and then cut into 12 servings.
