Ingredients

    Chicken Thigh, 1lb, 1 oz frozen ~3 large thighs (fat trimmed off)
    Green onion, chopped, sautéed, 1 cup
    yellow onion, chopped, sautéed, 2 TBS
    Avocado, Hass, 1 medium, whole (5oz), 2 serving
    Minced Garlic (Ajo K) 2 TBS
    Chicken Broth, walmart brand, 33% less Na, 6 cup (3- 14oz cans)
    Extra Virgin Olive Oil, .75 tbsp
    Butter, salted, 1 pat (1" sq, 1/3" high)
    Pepper, black, .5 tsp
    Cumin (ground), 3 tsp
    Lime, raw, wedge, 4 wedges
    Cilantro, raw, .5 cup chopped

Directions

Sauté green & yellow onion in EVOO & butter
Place frozen chicken in crockpot
Add 3 cans chicken broth
Put sautéed green onions in crock pot
Add pepper/cumin seasonings & minced garlic

Cook, lid on, HIGH for 1.5 hours
Cook, lid on, LOW for 1 hour
After 2.5 hours of cooking time- Shred chicken with forks
Cook, LID OFF, LOW 20 minutes-40 minutes (depends on desired thickness of broth)

makes 4 servings: approx. 3-3.5 oz of chicken thigh / serving
Cook on "high" 4 hours
