Number of Servings: 6

Ingredients

    1 lb trimmed boneless pork tenderloin
    2 cups medium salsa
    1 can black beans, drained and rinsed

Directions

Pre-heat oven to 350 degrees. Slice pork into 16 thin slices. Spread scant 3/4 cup salsa on bottom of glass baking dish. Arrange slices of pork on top, slightly overlapping. Heap black beans on top and add the rest of the salsa on top of beans. Seal tightly with aluminum foil. Bake 30 to 35 min. Serve with mexican rice, green salad and whole wheat tortilla's. Serves 6 - 8.
