I found this recipe and now I can't find out who or where it was posted from. It was exactly how my grandmother made them years ago. Anyway... my husband, daughter and I loved them. Delicious! Ingredients

    Mashed Potato, Instant prepared and cold, 2.0 cup (remove)
    Flour, white, .25 cup (remove)
    Salt, 1/2 tsp (remove)
    Pepper, black, 1/2 tsp (remove)
    Garlic powder, 1/2 tsp (remove)
    Egg, fresh, whole, raw, 1 large (remove)
    Fresh Chives, 1 tbsp chopped (remove)
    --------------
    Olive Oil, 2 tbsp (remove)

Tips

You may or may not want to use as much salt & pepper but potatoes are normally bland.


Directions

Mix 1st 7 ingredients well. Helps if potatoes are leftovers and already cold from the refrigerator.

Heat olive oil in med-hot pan.

Spray ice cream scoop (=1/4 cup) with Pam or cooking spray.

Dip by ice cream scoop (or 1/4 cup) into frying pan.
Take fork and press down lightly.
Fry 3-4 minutes on each side until golden brown.

Serving Size: 8 - 2" (1/4 cup mixture) pancakes
