Introduction

This recipe is VERY loosely based on pasta puttenesca, but I took a few liberties for the sake of ease and caloric intake. The perfect meal for a busy Wednesday night when paired with a caesar salad. Ingredients

    20-24 Medium shrimp ( I use the cooked, peeled, frozen ones)
    1 cup uncooked whole wheat couscous
    1 shallot finely diced
    1 tsp. olive oil
    2 cloves garlic pressed
    1/2 can of anchovies
    fresh ground pepper to taste
    red pepper flakes
    1/4 tsp. dried basil (fresh would be better, but use more)
    1/4 tsp. dried thyme (again if using fresh use more)
    1 can diced tomatoes in juice
    1 cup water

Directions

In a 12 inch non-stick skillet on medium sautee the shallots and 1/8 tsp red pepper flakes in the olive oil until they become translucent. Add the pressed garlic, the herbs, the pepper, and the anchovies, sautee for about 1 minute. Add the can of tomatoes and the cup of water. Allow to come to a boil. Add the shrimp and return to a simmer. Stir in the couscous and simmer for 2 minutes. Cover and let stand for 5 minutes. Fluff with a fork and serve.
