Introduction
A refreshing salad of sweet apples and tart fruit dressing. No cooking! A refreshing salad of sweet apples and tart fruit dressing. No cooking!Number of Servings: 6
Ingredients
-
6 fresh pink lady apples, cut into 1/2 inch chunks
3 peaches, stoned and pureed
1 tbsp blackberry fruit spread
4 tbsp distilled white vinegar
2 packets lime crystals
1/3 cup plain nonfat yogurt
6 lettuce leaves (for serving)
Tips
I like things a little tart. Feel free to investigate other vinegars. Also, eat the lettuce leaf when you're done.
Directions
In a small jar, mix the blackberry fruit spread and the vinegar. This could be a sweeter vinegar, but I find the peaches and blackberry are sweet enough. Set aside to allow the tastes to mingle.
Chop up the apples. Put them in a large bowl and sprinkle with the lime crystals to keep them from browning. Stone and tear up the peaches and put them in a blender. Select and wash lettuce leaves.
Add the yogurt and blackberry vinegar to the peaches in the blender and puree until smooth. Toss the sauce with the apples and let chill for a while.
When serving, spoon 1 cup fruit salad into the lettuce leaves.
