Ingredients

    1 pound jimmy dean maple sausage
    1.5 medium granny smith apples
    1 large vidalia onion
    1 box uncle ben's long grain and wild rice
    6 slices cheddar cheese
    3 acorn squashes, halved

Directions

roast acorn squash at 425 for 30 minutes. Meanwhile, cook sausage in pan. remove, caramelized onions and apples. Cook rice. Mix all together and stuff the acorn squashes and top with one slice of cheddar cheese

Serving Size: makes 6 stuffed acorn halves
