Ingredients

300mls water
7gr instant yeast
500gr whole wheat flour
10gr salt
9gr stevia (can substitute with 18gr honey/sugar)
18gr shortening
Tips
When proofing I usually heat the oven just a touch (so that it is barely warmer than my hand) and proof in the oven as my house is usually too cold to do it on the counter.
Directions
Place all ingredients in a kitchen aid mixer with a dough hook. Mix on low until dough comes together. (If the dough is too dry now is the time to add water, if it is too wet add flour). Once the dough is well blended turn up the speed to medium (4-6) for about 10min.
Place in bowl, cover with plastic wrap and proof for 1hr at room temp.
Punch down and shape into two loaves and place in loaf pans. Let rise another hour at room temp. Preheat oven to 375F.
Once the dough has doubled in size and bake for 20-25min, until the top is a golden brown. (should sound a little hollow when tapped lightly)
