Ingredients

    3 cups peeled cucumber, halved lengthwise and sliced thinly
    1/2 medium red onion, sliced thinly
    1 Tbsp honey
    1/4 cup rice wine vinegar
    1/4 tsp kosher salt
    freshly ground pepper, to taste

Directions

Mix honey, vinegar, salt, and pepper in a medium bowl. Whisk until combined. Add cucumbers and onion to the bowl, gently stirring to combine. Add pepper to taste and gently stir again. Cover and refrigerate for 2-24 hours before serving.
