Introduction

These kabobs are one of our favorite summer meals. The flavors are fresh and you easily get two servings of vegetables and one of fruit. Plus you don't heat up your kitchen! Ingredients

    Marinade:
    1/4 c Kikkoman Low Sodium Soy Sauce
    1/4 c Canola Oil
    Juice of 1 lime
    2 T Fresh Ginger
    1/2 tsp black pepper
    2 cloves garlic, minced
    zest of 1 lime


    2 Boneless, Skinless Chicken Breasts, bite sized- pieces
    1 Red Bell Pepper, bite-sized pieces
    1 medium Red Onion, bite-sized pieces
    1/2 a Pineapple, bite sized-pieces

Tips

We have a very small grill that tends to be uneven so I like the higher heat to make sure the kabobs are cooked. You may have to play around with it to get it right for your family. We like our veggies with a little grill char.


Directions

Mix together ingredients for marinade. If you like, you can use a hand blender or food processor to make this quicker. Pour half into a ziplock bag and add chicken breasts, allowing to marinate for at least 25 minutes or overnight. Combine half the marinade with onions and peppers for 20-30 minutes. Heat your grill to 400 degrees F and cook for 3-5 minutes on both sides until chicken is done and peppers/onions are blackened slightly. Enjoy!
