Introduction

Super easy recipe for slow cooker chicken. We used it to make chicken fillings for pitas but it could easily have been used for enchiladas, nachos, tacos, or even chicken salad. Number of Servings: 10

Ingredients

    2 lbs Chicken (uncooked)
    1 can (7oz) of Green Chili Peppers
    1/2 cup Lime Juice
    1/2 cup Fresh Cilantro (Chopped)
    2 tsp garlic
    2 tsp of onion powder
    1 tsp salt
    1 Tbsp Olive Oil

    **Optional**
    additional can of Green Chilies
    chopped onions instead of onion powder



Tips

Add an extra can of green chili peppers to kick it up a notch!

Add some additional fresh cilantro when you serve the chicken as a garnish or just mixed in to the chicken if it is shredded.


Directions

1. Mix all ingredients together in a gallon size Ziploc bag (or an air tight container) the night before and let marinate in the refrigerator over night.

2. Place in the slow-cooker and cook on low for 6-8 hours (or on high for 4 hours).

3. Remove and shred (or just serve whole)

Serving Size: Makes 10 servings (1/2 cup serving)
