These banana bars are packed with goodness (and good flavour) - oats, brown sugar and luxurious melted butter combine into an almost butter-tart taste perfect for embracing the raisins. Mashed bananas add extra sweetness and moisture too, making these eggless bars perfect for every age! Ingredients

    4 large bananas
    1 cup packed dark brown sugar
    ½ cup cup-for-cup stevia
    ¼ cup melted butter
    1 tbsp vanilla
    ½ cup flour
    ½ cup oat flour or whole wheat flour
    ½ tsp sea salt
    1 tsp baking soda
    ½ tsp nutmeg
    ½ tsp cinnamon
    2 cups quick cooking (not instant) rolled oats
    ½ cup raisins, soaked in hot water and drained

Directions

Heat the oven to 350F and line a 9x13" pan with parchment.
Mash the bananas with the sugar and stevia in a large bowl until smooth.
Add butter and vanilla and mix well.
Add the flours, salt, baking soda, nutmeg, cinnamon and oats. Mix just to combine.
Fold in the raisins.
Spread evenly in the pan and bake for 20-25 minutes. Cool completely before cutting.

Serving Size: Makes one 9x13" pan, 20 squares
