Ingredients

    Chicken thighs, 1 lb boneless skinless
    tomato paste 6 0z
    1 container white mushrooms sliced
    3 c of large chopped multi colored peppers
    1 med yellow onion large chopped
    1 can coconut milk
    2 T green curry paste
    1/2 bag of fresh spinach
    1 can chickpeas, drained
    3 T unsalted butter
    1 T coconut oil
    1 T minced garlic
    curry powder, turmeric, salt, pepper to taste

Tips

serve over cauliflower mash or brown rice


Directions

brown chicken and set to the side. Melt butter and oil. Add onions and garlic, sautee until getting brown, add in peppers and mushrooms, cook until softened. Stir in all other ingredients except spinach. Taste sauce, adjust spice. Add chicken back to pan, bring to boil, then lower to simmer for 15 or 20 mins. Add spinach and let wilt. Serve over cauliflower mash or brown rice
