Ingredients

    1/4 cup BBQ sauce
    2 Tbsp Cider Vinegar
    1 Tbsp water
    2 Tbsp olive oil
    8oz romaine lettuce
    2 cups skinless, diced, cooked chicken
    1.5 cups corn kernals (look for no salt added)
    2 medium tomatoes, cut into 1/2 inch chunks
    2.5 cups black beans (look for low sodium)
    1 (4oz) can of chopped mild green chiles, drained


Directions

In a small bowl, with wire whisk, mix BBQ sauce, cider vinegar, and water. In slow, steady stream, whisk in oil.

On large deep platter, toss romaine with 1/4 cup dressing. Arrange chiken, corn, tomatoes, and beans in strips on top of romaine. Sprinkle with chiles and drizzle with remaining dressing. Toss just before serving.
