Ingredients

    2 turkey legs
    3/4 cup Quinoa
    4 thin carrots (about 1 cup chopped)
    about 3/4 cup chopped Celery
    10 - 12 Scallions, chopped
    6 cups Swanson Natural Goodness Chicken Broth
    .5 - 1 tsp. Salt
    1 TB. dried Parsley
    8 oz. pkg. sliced Mushrooms
    1 tsp. Sage
    1 can (15.5 oz. Cannellini (white beans)
    1 pkg (16 oz.) frozen mixed vegetables

Directions

Cook turkey legs in broth with seasonings. Remove legs and set aside to cool before skinning and removing bones. Add the qiuinoa (which had been rinsed) to the broth and bring to a boil.

Chop carrots, celery, and scallions and saute in a nonstick pan until they begin to soften. Add to broth and return to a boil.

Meanwhile, shred the turkey meat. Add turkey and mixed vegetables to the pot. Cook about 15 minutes, then add the mushrooms and cook for about 5 more minutes.

Makes 17 saervings of 1 cup each.
