Ingredients

1 1/2 Cups Flour
1 1/4 tsp baking powder
1/2 tsp baking soda
1/2 tsp ground cinnamon
1/8 tsp salt
2 slightly beaten egg whites
1 1/4 cup mashed banana
3/4 cup sugar
1/4 cup unsweetened applesauce
Directions
Preheat oven to 350 degrees
Mix Dry ingredients
Mix wet ingredients in separate bowl
Add dry mix to wet mix about 1/3 at a time. Mix just until everything is combined.
Put batter into a loaf pan coated with non-stick spray (you can also add a dusting of flour if you'd like to the greased pan).
Bake 45-50 minutes at 350degrees. Check with toothpick. Bread should be golden and the batter should not stick; the toothpick may be a little wet from banana. Cool bread in pan for 10 minutes. Remove from pan onto wire rack to cool completely. Bread keeps best if wrapped in cling-wrap and then wrapped with aluminum foil.
