Number of Servings: 20

Ingredients

    1 serving zucchini 1 medium (98g) (by DRABDALE)
    125 grams Gouda Cheese
    4 link (raw dimensions: 4" long Pork Sausage
    2 clove Garlic
    1 tsp Marjoram, dried
    1 dash Pepper, black
    1 tbsp Parsley
    2 medium Egg, fresh, whole, raw
    7 tbsp Extra Virgin Olive Oil
    1 cup Organic Spelt Flour (by RAMARTERRE)
    1 tsp Baking Soda
    4 serving Cherry Tomatoes, Fresh, 1 Tomato
    0.25 cup, sliced Zucchini
    2 sprigs Parsley

Directions

1. Grate the zucchini on medium-coarse to have approximately 1.5 cup, before remove seeds with a spoon, if necessary
2. Mix all the ingredients and add salt if necessary
3. Finally, whisk the beaten egg whites and stir in slowly
4. Pour the mixture immediately on a greased and floured form, I used 30 x 18 cm (11.5 x 7.5 in), it can also be used a bit more
5. Place rings of zucchini and baby tomatoes on the top
6. Place in a preheated oven at 170 C (338 F) and bake for 20 minutes, then reduce temperature to 150 C (302 F) and bake until pink and tomatoes and courgettes are baked, thus the dough should be done inside. Do not exceed this temperature, since according to various sources, the temperature tolerance (smoking point) of virgin olive oil is in the range 160 to 190 C (320 to 374 F)
7. After baking, cut it into cubes and garnish with parsley
