Ingredients

    1 cucumber
    2 roma tomatoes
    4 parsley sprigs
    1/2 lemon
    1 tsp olive oil
    red onion

Directions

chop cucumber into small cubes. take off some peel if desired.chop up tomatoes same way. chop up two slices red onion.put ingredients together in bowl. mince parsley.add to bowl.add olive oil and juice from lemon.mix together by hand or with utensil. enjoy

    I make this using Mrs Dash's Garlic & Herb Seasoning or the Tomato, Basil & Garlic. This is one of my favorites when garden cucumbers and vine ripe tomatoes are available. I make it first and allow to sit while getting other dishes ready so it can marinate. - 6/6/09

    There is an Indian version of this that is actually less fat and calories. Substitute white vinegar for the oil and add a dash of salt and vinegar! It's a cool side for the summer! - 3/18/07
