Ingredients

    1 medium (2-1/2" dia) Onions, raw
    2 clove Garlic
    .5 head, medium (5-6" dia) Cauliflower, raw
    .5 cup Swanson Natural Goodness Chicken Broth
    .75 cup Vitamin D Milk - 2%
    2 tbsp Extra Virgin Olive Oil

Directions

Saute onion and garlic in 2 T olive oil until carmelized. Meanwhile, chop cauliflower into florets about 1" to cook. Cook in chicken broth until tender. (Use extra chicken broth to cook, discard (or drink) all but 1/2 cup for blending.) Place cooked cauliflower and onions/garlic in food processor or blender. add broth and milk and puree until smooth. Can be used as soup with nutmeg on top and a crunchy addition like sunflower seeds, or as an 'alfredo' sauce over pasta or zucchini 'pasta'
