Introduction

Adapted slightly from Brown Eggs and Jam Jars by Aimée Wimbush-Bourque, this sauce combines the sweetness of roasted, fresh peaches with Vidalia onions and exotic black garlic. A touch of smoked paprika adds true BBQ nuances too! Ingredients

    3 medium peaches, halved and pitted
    ½ sweet onion, peeled and halved
    1 tbsp olive oil
    ½ cup cider vinegar
    2 tbsp brown sugar
    2 tbsp honey
    6 cloves black garlic
    1 (6 oz) can tomato paste
    ½ cup apple juice
    1 tbsp Dijon mustard
    ½ tsp black pepper
    ½ tsp smoked paprika
    ½ tsp salt

Directions

Heat oven to 425F
Place peaches, onion and garlic, cut side up (where applicable!), on a parchment-lined baking sheet and drizzle with oil.
Roast for 25 minutes, shaking pan halfway through.
In a large pot, combine the vinegar, sugar and honey and bring to a simmer, stirring to dissolve the sugar.
Add the remaining ingredients and the roasted mixture and simmer 25-30 minutes.
Puree with an immersion blender until smooth and can 15 minutes in a water bath.

Serving Size: Makes 4 cups, 32 (2 tbsp) servings
