Ingredients

    (1) 2.5 pound package of boneless chicken breasts cubed
    (1) 1 lb package of broccoli (frozen or fresh)
    (2) cans of cream of chicken soup or (1) can of cream of chicken and (1) can of cream of celery soup
    (1) 2 cup of cheddar cheese shredded
    2 cups of white rice prepared seperately

Directions

While preparing chicken cook rice in seperate bowl in the microwave. 4 cups of water to 2 cups of rice. Cook in the microwave for 20 minutes. (recipe calls for white rice can substitute brown rice, but brown rice doesn't turn out too well in the microwave so use conventional preparation for this)

THE CHEATERS WAY :)
put all of the cubed chicken, broccoli, and cream soups (add enough water to mix freely approx 1 cup) in a 13 x 9 baking dish. Bake on 350 degress for 20 30 minutes until meat is throughly cooked. When the meat is cooked add cheese and bake until melted. Serve over white or brown rice.

The not so cheaters way :)

Cube bonless skinless breast and cook in a dutch oven. Browning the cubes slightly. I usually add adobo and parsley for flavoring, but if I'm in a hurry I leave this out. Can also use minced garlic for a little extra pop.

Add broccolli with 1 cup of water. Simmer mixture for a minute.

Add cream soups and mix thoroughly. Simmer for 15 minutes approximately until meat is cooked.

Add cheese to the pot or serve individually over a bed of rice.

Enjoy! Serves approximately 10 - 12

    I fixed this for supper. I had cream of mushroom soup on hand and leftover chicken legs so I used them. It turned out very tasty. - 6/11/11

    Good Fall food! Opted to add onions and garlic while browning the chicken. There are only 3 of us, so I used 1 breast and 1 can of soup and reduced the broccoli and cheese. Hubby had 2 servings - that's saying something! - 9/3/09

    I buy a frozen boxed version of this ,which I'm certain can't be as good or as good for me as this, so its time to do some shopping. - 5/3/08
