Ingredients

2 TBS Olive Oil
1 medium Onion, chopped
8 oz Sliced Portabella Mushrooms
3 cups Frozen Cooked Seasoned Chicken Breast Strips w/ rib meat
2 cups Sugar Snap pea pods
1.5 cups Matchstick Carrots
8 oz Broccoli Cole Slaw
1 tsp Sesame Oil
1 tsp Ginger Oil
2 envelopes Zatarain's Ready to Serve New Orleans Style Stir Fry Rice (each pack is 1.5 cups)
Dash of Salt
1/2 tsp Black Pepper, black
1 tsp Cayenne Pepper
1 tsp Ground Cumin
1 tsp Emeril's Original Essence
1 tsp Kikkoman Lite Soy Sauce
Directions
Heat olive oil for a few seconds in fry pan. Add onions and cook just shy of becoming translucent. Add mushrooms, frozen chicken strips, and pea pods. Let cook for a few minutes, while heating Zatarain's rice in microwave. Add carrots and broccoli slaw to pan and toss into chicken mixture. Add ginger oil & sesame oil. Add all spices and blend well. Let simmer for a few minutes and then add rice. Simmer for 5-10 minutes and add Lite Soy Sauce. Stir in well.
