Ingredients

    1/4 cup packed lemon balm leaves, rinsed
    1 Tbs onion, diced
    1 oz feta cheese
    1 pepperocini pepper

Directions

In mini food processor or 'Magic Bullet', add all ingredients. Process until chunky-smooth. With the Bullet I had to scrape and shake several times to get the leaves shredded enough. I used it as a sandwich filling, but feel free to use your imagination - probably good mixed w/ cream cheese as a cracker topping.

    Very Good
    Added olive oil to make it more pesto-like (and so I could use my blender). The recipe works--no leftovers from today's potluck contribution. - 5/9/09
