Introduction

Great chicken dish that can be served by itself or over rice. Great chicken dish that can be served by itself or over rice.
Number of Servings: 4

Ingredients

    4 chicken breasts, deboned and skin removed
    1 tbsp olive oil
    1 large onion, chopped
    1 cup fresh sliced mushrooms
    2 tbsp dried basil
    2 tsp minced garlic
    1 cup fat free chicken broth
    1/4 cup white wine

Directions

Heat oil in large skillet. Add chopped onion, mushrooms, garlic and basil. Saute until onion is slightly translucent. Add chicken broth and wine. Bring to a boil. Add chicken, bring back to boil then reduce heat. Cover and simmer until chicken is 160-180 degrees (about 40 minutes). If you like thicker sauce, mix 1 tbps cornstarch and 2 tbsp cool water then add to sauce, stirring until thickened. Makes 4 servings.

    Incredible!
    This is a fabulous recipe. Instead of dried basil I used 5 large fresh leaves. Everything tastes better with fresh herbs. Also, because I didn't have chicken broth on hand, I used beef broth and it stilll was amazing. I laid the chicken on top brown rice and the flavour was lovely. - 9/25/11

    This was great and very easy. I browned the chicken first. I also added 3 oz of ff cream cheese to the sauce. I will definately make this again. - 3/17/08
